Christmas recipe time!!

I feel so Christmassy at the moment. Here's a recipe for a Christmas
cake my mum's friend gave her.

Ann's Christmas Cake

1kg mixed fruit
125g butter
1/2 cup brown sugar
1/2 cup water
1 cup currants
1 cup chopped dates
2tsp mixed spice (heaped)
2sp cocoa
1tsp baking soda
1/2 cup port wine
4 eggs
1tbsp apricot jam
1 cup flour
Cherries, pineapple, nuts, etc.

Put first eight ingredients in a big pot.
Bring to boil continuously stirring.
Boil one minute.
Remove from stove and add baking soda and port wine.
Stir and let stand until completely cold.

Add eggs, jam and both flours. Mix together and place in cake tin,
24cm square or round. Smooth top of cake and add decorations
(cherries, pineapple, etc.)

Place in oven for 2 to 3 hours at 150 degrees C.
Check often after two hours.
When cooked wrap in towel until cold.

Glacè with equal quantities of port wine and apricot jam brought to
boil, painting with brush.

I love it how we eat Christmas lunch and then, we are all like, "Whoa, I'm full."
And then, someone brings out the dessert (christmas pudding) and everyone is like, "I don't know if I have room for it..."

And I'm always like, "I can make room. ^_^"
